Moroccan Chicken Salad (adapted from Great Good Food) ~ obviously not truly Moroccan
A nice summer recipe
Ingredients:
For the Salad
- 1.5 pounds chicken breasts
- 1 red onion, sliced thin
- 1 red bell pepper, slice thin
- 1/2 cup pitted Kalamata olives
Dressing
- 2-3 cloves garlic, pressed
- 3/4 tbs cumin (or to taste)
- 1 tsp paprika
- dash of cayenne
- salt and pepper to taste
- fresh cilantro and flat parsley, about half a cup of each, chopped fine
- 1/4 cup lemon juice
- 1/3 white balsamic (or red wine) vinegar
- 1 cup chicken broth
- 2 tbs olive oil
Directions:
1. Roast or poach the chicken. Shred it when cool.
2. Combine chicken, pepper and onion.
3. Mix the ingredients for the dressing and toss on the salad.
4. Garnish with olives.
