Mediterranean Beef Stew ~ Super easy recipe!!
Ingredients
* 3/4 lb. beef stew meat, cut into 1/2" pieces
* 2 medium zucchini, cut in half lengthwise, then crosswise into 1/2" pieces
* 2 cans (14.5 oz.) cans diced tomatoes
* 1 2" stick cinnamon
* 1/2 teaspoon freshly ground black pepper
PREPARATION:
1. Scatter the zucchini chunks on the bottom of the slow cooker.
2. Layer the meat on top; then add the rest of the ingredients.
3. Pour in the 2 cans of diced tomatoes.
4. Cover and cook on high for 5 hours or alternatively, cook on high 1 hour then reduce heat to low and cook for 7 hours.
To serve:
Remove and discard cinnamon stick before serving.
