Oatmeal Cake
A recipe my Aunt has made for 40+ years, similar to coffee cake.
Cake Ingredients
1 ½ cups hot water
1 cup quick cooking oats
1 cup brown sugar
1 cup white sugar
½ cup shortening
2 eggs
1 ½ cups flour
1 tsp. baking soda
1 tsp. vanilla
½ tsp. salt
1 tsp. cinnamon
Pour hot water over oats and set aside. Cream brown sugar, white sugar and shortening together. Beat in two eggs. Add flour, soda, slat cinnamon and vanilla to shortening mixture. Add oats and beat well. Bake in greased 9 x 13 pan for 35 minutes at 350.
Frosting Ingredients
4 tbsp. milk
1 ½ cups brown sugar
1 cup chopped nuts
1 can coconut
1 cup oats
1 stick butter
Boil butter, milk and brown sugar. Let stand for one minute. Add rest of ingredients and mix well. Pour over cake while war. Place in broiler and brown icing (about 2 minutes).
