Potatoes in Spicy Olive Oil

Serves 6

 

INGREDIENTS

 

1/3 cup olive oil

3 cloves garlic, thinly sliced

2 tbsp tomato purée

1/2-1 tsp harissa

1 tsp ground cumin (optional)

1/2 tsp salt

2 cups water

2 lb potatoes, peeled and sliced 1/2 in thick

4 tbsp chopped fresh flat-leaf (italian) parsley or mint

 

DIRECTIONS

 

In a large sauté pan over medium heat, warm the oil. Add the garlic,

tomato purée, harissa, cumin (if using), and salt and stir well.

Add the water and the potato slices and mix well. Bring to a boil,

reduce the heat to low and simmer until the potatoes are nearly cooked,

10-15 minutes. Add the parsley or mint and simmer until the potatoes are

tender, about 5 minutes longer.

Transfer to a serving dish. Serve hot or at room temperature.
